One might think that this is a baker’s idea for many years, but a conversation with the founder Choy Ee Ling reveals something else: it only started when the disease hit in 2020! “I remember people fighting over store-bought bread. I asked myself: “What happened? “If I have flour, yeast, salt and water, I can make it myself,” the 41-year-old told FMT Lifestyle.
He did that, learning from YouTube videos and cookbooks. Eventually, Choy started a home business and, as demand grew, opened a physical store last August. Somehow I managed to create a focaccia that was crispy on the outside but soft on the inside,” he said.
